1. Amritsari Paneer Bhurji

1.1. Making masala

  1. Roast 2 tbsp besan on low flame until fragrant.
  2. After besan cools add 3/4th cup curd, 1tsp coriander powder, 1 tsp grab, 1 tsp chaat masala, 1tsp pav bhaji masala.

1.2. Tomato onion base

  1. 1tbsp oil + 1tbsp butters –> Let it heat
  2. 1tsp cumin seeds + 1tbsp kasuri meethi crushed + 5 cloves of garlic (chopped) –> saute
  3. Add 1 jumbo chopped onions –> fry till color change
  4. 1/2 tsp turmeric + 1tsp chilli powder –> Saute on low flame
  5. Add 1 chopped tomato –> Let it cook till mushy

1.3. Mix

  1. Add masala to tomato onion base –> Cook till oil seperates.
  2. Add 3/4th cup of hot milk –> Mix well
  3. Add 200g paneer + little bit chopped onion + little bit chopped tomato + little bit bell pepper + cilantro –> Add after turning off the heat.
